Keeping a low flame: add the meat to the Sofrito, stirring to break it up. Cook for 10 minutes. Add the water, and then the tomato sauce last. Cook for 20 minutes, on the low flame, until the water is almost gone. Then finally add: the raisins, olives, and red wine. Cook a little more (less than a minute) to your desire, and its ready to serve. |
